A Few Vegan Recipes from Last Night’s Biggest Loser!

Hey everyone! Here are the recipes from last night’s Biggest Loser. Lets thank my friend Brooke Larson for sharing these awesome recipes with us, she is amazing!

Roasted Cauliflower

Serves up to 4 as a side dish 2 heads of organic cauliflower (I get mine from the farmers market, you can get purple, orange, or white)

  • Core and cut cauliflower into uniform pieces.
  • Heat oven to 400 degrees
  • 2 Tablespoons good quality olive oil
  • 5 sprigs of organic thyme(picked/pulled from stem)
  • 2 garlic cloves (smashed and skinned)
  • 2 Tablespoons Red wine Vinegar sea salt and cracked black pepper
  • You will need 1 large baking tray/sheet tray
  • Arrange cut cauliflower onto sheet tray and sprinkle with olive oil,red wine vinegar, thyme, smashed garlic, and season with salt and pepper(don’t like salt don’t add) gently toss and place into hot pre-heated oven.
  • Roast cauliflower until golden brown and soft.
  • Check after 30 minutes. Everyone’s ovens are different. If it needs more cooking time give it more time.
  • The cauliflower will taste nutty and the acidity from the red wine vinegar adds a beautiful tart yet sweet flavor!
  • Enjoy! Ps- you can also do this with Carrots, potatoes, onions, broccoli, green beans, brussel sprouts, etc.

Roasted Wild Mushrooms with Shaved Fennel Salad

Serves 4 people (side dish)

  • Preheat oven to 400 degrees you will need a variety of mushrooms, about 4 different types, a good large handful of each variety. Shitake, Morel, Oyster, and Hen of the woods to name a few.
  • Make sure your mushrooms are clean of dirt. You can do this by Gently wiping them with a paper towel/kitchen towel. Don’t submerge them in water! Mushrooms are like a sponge and absorb water, you won’t get a good roast on them if they are full of water!!
  • The mushrooms need to be cut into the same size… Sometimes it’s easier to pull mushrooms instead of cutting them. How ever you can or what ever is easiest for the “cook” portion the mushrooms and place on a sheet tray.
  • 3 tablespoons of good quality olive oil
  • 4 smashed garlic cloves( skinned and smashed)
  • 1 leek (washed, cut lengthwise, and sliced into 1/2 moon shape)
  • 1 large shallot minced/finely diced 5 sprigs of fresh thyme pulled from the stem
  • Salt and pepper to taste
  • Add all of the above ingredients onto the portioned and cleaned wild mushrooms gently toss with your fingers.
  • Once evenly coated place into a 400 degree oven.
  • Roast mushrooms until golden brown and slightly crispy.
  • Check after 35 minutes. If they need more time, leave them in a little longer!
  • Also as a cook it is a good idea to get in the habit of cooking with your nose! You will be able to smell the mushrooms when they are roasted and ready… once ready pull out of oven and let “rest” until you can handle then…
  • *Note* you can use what ever mushrooms are available to you. I make this with only button mushrooms and it is delicious!
  • For the shaved Fennel Salad- 1 large bulb of fennel(cut in half) plus a few fronds for garnish
  • 1/2 a lemon(the juice)
  • 2 Tablespoons of good quality olive oil
  • Salt and pepper to taste
  • Dash/sprinkle of fennel pollen (Whole Foods and any specialty spice shop will have this, kinda pricey but oh my SO good)
  • You will need to shave the bulb of fennel you can do this by using your chefs knife or I find it easier to use my mandolin. Please watch your fingers and be very careful!!
  • Once shaved place into a mixing bowl and add oil, lemon juice, salt, pepper, fennel pollen, and fronds. Gently toss with your fingers.
  • Season to your liking and let sit for 10 minutes.
  • To assemble: Place roasted wild mushrooms into a serving plate or bowl. Put the shaved fennel salad on top of the roasted mushrooms and drizzle the extra liquid/vinaigrette over the top. Sprinkle with a little more fennel pollen and fronds.
  • Ps- you can eat this dish room Temperature or you can use the mushrooms while there still warm, up to you. I like room temperature.


Chopped Broccoli with Pine Nuts

Serves 4 people (side dish)

  • 1 large stalk of organic broccoli (florets and stem cut into uniform pieces)
  • 3 Tablespoons of pine nuts (toasted)
  • 2 tablespoons of olive oil
  • 2 garlic cloves smashed and skinned
  • 1 large shallot sliced
  • 1 Tablespoon of red pepper flakes (less if you don’t like spicy)
  • 1 Teaspoon of chopped and grated lemon zest
  • Salt and pepper
  • Heat a large pot with olive oil, add the pepper flakes, garlic, shallot, and season with salt and pepper.
  • Once the garlic and shallot are “soft” add the portioned broccoli. Stir until evenly coated.
  • Add 1/2 a cup of water and put a lid on the pot.
  • Cook the broccoli until the water evaporates about 6-8 minutes.
  • Once water is evaporated add the toasted pine nuts and lemon zest.
  • With a old school potato masher” mash” the broccoli. You can also use a Cuisinart with the blade attachment, it will only take a few pulses or you can use a food mill.
  • *Note* don’t put into a blender! Enjoy!

Thanks for posting Bob… look forward to making these! My mother, 62, went Vegan 3 years ago. She has lost 30 lbs and lowered her cholestrol to 145. She read Prevent and Reverse Heart disease and then Engine 2… by Dr. Esselstyn and his son, Rip. I am now after my third child on my quest to become healthy and becoming a vegan in the process. Thanks for the recipes – loved that episode :) I ‘attempted’ to incorporate one vegan meal a week into my family’s meals, but I struggle to eat enough protein as it is (I’ve been told I don’t eat enough protein) – I don’t see any protein in this meal other than the pine nuts or am I missing something?

Can you give the other recipes too? Maybe I’m wrong, but I thought there were 4 or 5 dishes. I’m pretty sure there was one with tomato and basil. and I think there was a pasta too. But I am happy to just have these.

Gina- you can use a recipe calculator (for example Sparkpeople has a great one) to break down the recipe and get calories, fat, fiber for the number of servings. I don’t imagine that Bob or his team has time to figure out nutritional information for these. I’m pretty lucky to just have the recipe. I don’t mind taking the time to figure out the calories :)

Runnurse – For protein, you would be pretty surprised how much protein you get from veggies. Broccoli and mushrooms are pretty high in protein. Broccoli has 7g of protein per serving – not too shabby. When you add all that up from an entire plate full of veggies (plus the pine-nuts), you will find in the course of the day you can do fairly well in protein. What you could do is add a serving of roasted chick-peas, some hummus or another dish of beans, quinoa or something that gets some extra protein in your meal.

Thanks BOB!! I was so excited when I saw that you were serving them a vegan dinner. I almost jumped out of my seat. I watched that segment 3 times, just because I was so exicted to see you talk about veganism on national television!! Way to go BOB!!! I’d love to see more too!!

These recipes look wonderful! Don’t really need a recipe for the tomato/basil salad. In my family, it’s just known as tomato salad and everything’s done to taste. Tomatoes, basil, a bit of salt, fresh garlic, and a bit of extra virgin olive oil. I refrigerate mine and give the ingredients a chance to combine. It’s even better the next day!

You came to the General Mills in Cedar Rapids Iowa and met my husband. If he would have told me I could have met you too if I had gone to the plant I certainly would have gone. I’m currently 238 lbs at 5 ft 5 in tall and I need to get in shape, but college is killing me at the age of 43. All my time is devoted to school since I’m so out of practice. I need to fit in The Biggest Loser shows for inspiration.

Hi,

I was really inspired last night by the show when you invited us into your home. I didn’t realize that you were vegan and was really impressed with the dishes you had made. I have been put on a vegan program by my doctor because of some health issues regarding my digestive system. Not only has he put me on a vegan diet but I can’t have any oil either. To top it off, I’m allergic to tomatoes. So as you can see it makes things quite interesting in finding recipes that I can cook. Is there any suggestions that you can make to help me make the success out of this and continue to lose weight?. I have so far lost 15 pounds and want to lose another 45 lbs. Thank you so much for your help.

@Nbaumbach: Congratulations on becoming a vegan!! You’ll love it! For vegan recipes will very little or no oil, try http://blog.fatfreevegan.com/. There are a ton of recipes there, they’re ALL vegan, and the blog author avoids oil for health reasons, too, so she generally doesn’t include it in her recipes. I hope that this helps! I use her website all the time!

I’m so happy to hear that you are Vegan.
I’m a Vegan too, and the hardest thing is not cooking the food or enjoying what you are eating. The hardest thing is dealing with friends and family who don’t support you. We need more role models like you!!

I’ve read many books before I went vegan, and among them are The China Study – and I’m convinced that vegan diet is the best thing you can do for your body… and for all the innocent animals.

You should write a new book about these things you know now about being a vegan. And have some recipes in it – and I’m sure it will make thousands of people go vegan.

Thank you so much for not only talking about vegetarianism and veganism on TV but for posting the recipes. I receive a lot of backlash from people about not eating meat and it is refreshing to see someone like you talk about it on tv. I was hesitant to join the biggest loser club because I felt there would be more of an emphasis on animal protein and that I would not be able to follow the diet recommendations. Is the BL Club vegan friendly? I need to lose about 20 pounds and was considering joining. You are an inspiration. Thank you!

Ahh the protein myth. It’s really hard to under consume protein if you are eating enough calories. Most people eat too much protein and it’s actually causing cancer. Protein deficiency is not an epidemic at all but heart disease is the #1 killer. So why is everyone worried about eating animal protein when that’s what’s actually killing people? Also did you know that 1 cup of peas has 21% of your daily requirement of protein while an egg only has 7%?

Great recipes!! How ’bout I had my first star struck moment ever, about 2 weeks ago. I thought I saw Bob driving in the car behind me. This guy looked EXACTLY like him in the rear view mirror. I’ve met LOT’s of celebrities, but this was my first heart palpitation, “Oh my gosh” moment ever! So, I slowed down enough that he finally passed me, but I could immediatley tell from the side profile that it wasn’t him.:( Yet, I couldn’t believe I was so giddy, but Biggest Loser is one of my favorite shows. Although, weighing 125lbs isn’t gonna get me on the show, but I would totally love to get my ass kicked by Bob and Jillian!!! Too bad for me.:( Maybe, I can get my two sisters on??? (If you read these) Please Bob, they really deserve it!!! Well anyway, it was super nice seeing “Bob”! Even if it was short lived, lol.

These all sound great! Would love to see you get away from the oil and salt tho! There are other ways to get healthy fat without having oil. Read books by Esselstyn, Fuhrman, McDougall, Barnard, Campbell…the people you have on your show are usually already have heart disease and probably dont even know it! What better way to help them than to help them reverse heart disease, diabetes etc! Keep up the great work!

I gave the broccoli one a go this evening (but with an onion as I didn’t have any shallots). My husband went from looking at it doubtfully in the saucepan saying ‘I’m not sure I’ll like that, but I’ll give it a try.’, to ‘This is okay, I suppose’, to ‘This is nice, you can make it again’, to ‘Actually, I really like this’ to ‘Can I have some more?’. I cannot remember another occasion when he’s asked for a second helping of vegetables! I’ll definitely make it again :)

LOVE the idea of Bob writing a vegan cookbook! Especially one featuring mostly these types of delicious vegetable recipes. So many vegan cookbooks currently on the market heavily incorporate fake meat products, lots of wheat gluten, soy products, etc. Would definitely purchase a beautifully photographed book with delicious vegetable-focused recipes!

Bob I was really happy and surprised to learn this week that you are a vegan. I think it’s fantastic that you were able to share a little of your lifestyle on TBL. I wonder though, will you still be endorsing Jennie’o's turkey slices or other animal products on the show? Since mainstream food makers support the show, I realize, that may be tough. But, anyway…just wanted to say that I appreciate you sharing this aspect of yourself with viewers. I have honestly always been a Jillian fan…but have a real problem with her dogged endorsement of meat in her recent book. Hearing about your lifestyle on the show this week has really made me look at you with new eyes and made me more interested in listening to what you have to say in the future.

One friendly suggestion I’d make…since you liked Skinny Bitch….is to check out some other substantive sources on Veganism and related lifestyles (Raw Food, Fermented Foods, Wild Edibles)…before you really decide this lifestyle is for you. So many people choose this lifestyle (are then embraced by die-hard and liberal vegans alike) then later decide it’s not for them. I think that’s ok…but it would be kinda messed up if you like…wrote a book about Veganism next summer and then decided…after reading say, a book on the Paleo diet…that you weren’t really into that Vegan thing. There are a lot of helpful and well grounded sources you might want to look at. Some interesting recent sources include the DVD “Raw for 30″ as well as Donna Gates on Body Ecology and fermented foods. Just discovered that you are vegan and loving it. Cant wait to try the recipes you shared. I am newly vegan (this year) and on a quest to learn and teach myself as much as I can cooking wise. Its SO delightfully fun. Saw your interview with Farm Sanctuary and it showed me what a great vegan role model you are for us all. So excited to learn with you….Skinny Bitch was what did it for me, havent read China Study yet, but JUST bought it after I heard how influential it was for you! Tal Ronnen is great, but Alicia Silverstone’s book is MUCH easier to follow ;) Kudos to you for exciting and inspiring me tonight. I am going to “sponsor” a turkey from from sanctuary this year for me and my two veg sisters to honor for the holiday while we whip up some AMAZING vegan treats :D

Hi Bob, The food on this weeks Biggest Loser looked soooooo good. I am so very glad you are sharing the vegan recipes with all of us. Hey, maybe its time for you to put out a cookbook of all your favorite vegan recipes! :)

Bob – I LOVE that you’re vegan! As a fellow vegan I really, really appreciate these recipes! Some people think that vegan foods are bland and gross so I am so glad to use these recipes to prove them wrong! Keep them coming!

Thanks Bob…the food looked great on the show. I can’t wait to prepare these myself. I hope you’ll include more vegan cooking on your site and on BL. You should also consider having a vegan athelete, such as Brendan Brazier or Scott Jurek, on your show…this would quickly debunk the myth that veggies are emaciated wimps! :)

I’m not vegan or vegetarian, but I eat very little meat. I support anyone who choses that lifestyle. I can imagine how hard it must be. I followed the Swank MS Diet for a few years after I was diagnosed with Multiple Sclerosis, and it is very restrictive and there wasn’t much support.

I am not a vegan, but I am always looking for new things to do with veggies. I know how great they are for us, but seriously, I can only eat so much steamed broccoli. :-) Thank you so much for sharing, I can’t wait to try these!

The broccoli dish is really good. My husband and I both enjoyed it and it was pretty easy to make.

I tried the broccoli recipe, really good! I would rank it #1. #2 was the mushroom and a close #3 was the cauliflower. Really yummy, and quite filling!!

My 9 year old was so excited by the food that was served in the scene at Bob’s house. He has asked that we try a month of vegan eating and wanted to start tonight with these recipes. Thanks to Brooke Larson for sharing them. My son went to bed last night saying “you know mommy, you really want your plate to be colorful with food”. Go Bob!

Last night I made the broccoli and the cauliflower recipes they ere both great, I thought there was a brocolini and rice one does anyone remember that one?
re starting Bob’d w/o’s today had been doing some slim & 6 and just wasn’t enough of a challenge for me.

I’m not a vegan but saw these recipes on the BL a few weeks ago and thought they looked delish. I don’t eat nearly as much vegetables as I should so recipes like these inspire me to eat better. I just fixed the cauliflower dish today and loved it! I’ll definitely be fixing this one again.

Please give us more recipes. You are awesome I just started working out with your DVD’s. You remind me of my swim coach when I was a child, he was one of the best coaches I ever had. I don’t know if I will be able to say that anymore…. Keep up the great work….

Bob I love you. The fact you have now gone vegan is sooooooo huge, its like amazing that you can be such a huge role model for everyone, especially athletes who think they need animal protein to be lean and fit. For all you vegan’s out there please, please check out TcoilnCampbell.org it explanes how a whole food plant based diet is the way to go especially for the mega elite athletes who you would not believe are following a WFBBD. Being vegan is awesome but switching to a real WFPBD is crazy amazing!! a vegan diet is full of processed foods and refined oils and sugars. Try it you will not only loose a ton of weight or (gain if needed) you will be preventing ALL chronic disease,saving animals from murder, and saving the enviroment. xoxo
